Just like when we get a little older, we get a little wiser (hopefully) and the way those old, broken-in
jeans are gloriously soft and fit like a glove; old, dark brown bananas can be a wonderful thing as well. If
your bananas have turned into a mushy mess before you have gotten the chance to eat them, don’t
worry. Sometimes older is better. Did you know that the best banana bread is made from overripe
bananas?
Banana bread made from overripe bananas is moist and sweet; and it can be made in a variety of ways
with options to please every palate…
Simply add walnuts, raisons or fold in frozen blueberries. How about cream cheese pecan streusel
banana bread? Or serve your banana bread fresh out of the oven topped with maple syrup, browned
butter or a sweet, crumbly mix of cinnamon, sugar and butter. Now that’s what I’m talkin’ about!
Like caramel? Coffee infuse your banana bread and top it off with a caramel glaze; serve it warm over
ice cream with caramel sauce; or add flaked coconut and pineapple for a tropical flair. Chocolate lovers
can add chocolate chips for melty goodness or go all out with banana bread that is totally chocolate.
Make your favorite banana bread recipe into muffins or in different varieties of mini loaves that are easy
to freeze and give as tasteful holiday gifts. You can also add dried cranberries or maraschino cherries for
color.
There are tons of banana bread options for all those health-conscious folks out there too! Go non-fat
with egg whites and applesauce to bind things together or use wheat flour for whole grain banana
bread. You can even make your banana bread grain-free or vegan!
Here’s an added bonus…If you don’t have time to make banana bread right away, you can just freeze
your overripe bananas for later!
