Vegetable Soup

Today let’s make a hot steamy & delicious pot of vegetable soup.

1 large stock pot
8 cups water or Vegetable stock
2 Carrots
1/2 large Onion
2 Celery stalks
1 cup of chopped Kale or Spinach
1 cup of chopped Green Beans
2 chopped Zucchini
1 cup chopped Squash
1 tsp Thyme
1 tsp Oregano
1 Bay Leaf
Salt & Pepper (to taste)
1 tsp olive oil

Heat oil in a large stock or soup pot.
Add the carrots, onions, celery, green beans, zucchini, squash.
Cook for 4-5 minutes on medium-high while stirring regularly.
Add spices, kale/spinach and salt (if desired to vegetables).
Add the water or stock to vegetables then add bay leaf.
Cook for 20 minutes. Adjust seasoning (salt & pepper) if necessary.
Remove the bay leaf and serve.

Goes well with our Olive Oil Ciabatta bread (toasted) or make croutons with them. Voila! Enjoy an amazing soup
