All you need to do is pick up some farm fresh ears of corn and ripe avocados from the convenient Perrine’s Produce location of your choice and you will be well on your way to wowing any partakers!
The salsa for this easy and delicious treat is finely diced avocado mixed with chopped tomato and red onion, brightened up with a few squeezes from a lime and seasoned with salt and pepper to taste.
For your corn cakes, mix ¼ cup of flour, a ¼ cup of crumbled Cotija and two beaten eggs. Then, just fold in the kernels from two ears of corn and some chopped scallions. Brown two tablespoon sized scoops and sprinkle with sea salt as they rest on a plate lined with a paper towel to dry.
