Creative Ways to Use Overripe Fruits & Vegetables

We all love to get our fill of delicious, nutritious fruits and vegetables, but hate to waste them. So, what is a person to do when their produce becomes a bit overripe? Plenty!

Take your avocados, for instance…You can scramble them into your eggs, blend up a creamy salad dressing or smoothie or make avocado fritters. Bake avocado brownies, serve up some avocado pancakes or invite your friends over for guacamole dip. You can even make an avocado face mask!

How about your overripe tomatoes? Make a tangy vinaigrette, soup, salsa, gravy, pesto or top pizza and flatbread.

We all know that we can whip up amazing banana bread, but you know what else is delicious to make out of overripe bananas? Pancakes! Yep, just add them to your batter. Bananas are also great in smoothies and so many desserts, such as: chocolate banana pie, butterscotch banana muffins, brown butter banana griddle bread and banana pudding or ice cream. Did you know that you can also freeze your bananas until you are ready to use them?

What do you do with your overripe or bruised apples? Make jam, baked apples, caramel apples, apple pie, apple cake, apple fritters, apple crisp, apple tarts, apple turnovers, easy applesauce in your crockpot and keep in mind that cooked apples pair very nicely with pork dishes!
