Crispy Garlic Chicken with Roasted Broccoli & Carrots

This effortless sheet-pan meal features juicy, garlic-crusted chicken thighs roasted alongside fresh broccoli and sweet carrots.  The Ingredients:

  • Boneless Chicken Thighs
  • Broccoli Florets Carrots (sliced into sticks)
  • Fresh Garlic (minced)
  • Olive Oil
  • Salt & Pepper to taste
  • Minced Garlic
  • Mixed Spices (optional)
  • Lemon (optional)

Directions:

  1. Preheat oven to 425°F (220°C).

  2. Pat the chicken thighs dry. Rub them generously with olive oil, salt, pepper, and minced garlic. Place them on one side of a baking sheet.

  3. On the other side of the sheet, toss the broccoli florets and carrot sticks with olive oil, salt, and pepper.

  4. Roast for 25–30 minutes. (Check the veggies at the 20-minute mark; if the broccoli is getting too crispy, remove it early while the chicken finishes).

  5. Optional: Squeeze a little lemon or sprinkle some of the Belgioioso cheese over the broccoli before serving.
