Looking for some creamy comfort food that will warm your innards? Roasted red pepper soup is simply made by pureeing roasted red peppers (of course – and I like to peel the skins off mine, but you don’t have to) and onion and garlic that are first sauteed in butter. Then just add some heavy cream for indulgent silkiness (you can opt for half and half for a lower fat version that is still very tasty), as much vegetable broth as you like to thin it down to your preference and season with fresh basil, salt and pepper to taste. All that is left for you to do is enjoy!

Love pasta, but hate the calories? Try spaghetti squash this winter. It’s really easy! Bake or boil your spaghetti squash until tender and then just rake out your “spaghetti” with a fork. You can enjoy this delicious pasta-light meal with your favorite red sauce (or gravy as my Nonna would say) or garlic and olive oil.

Don’t forget that sweet potatoes and dark leafy greens like kale pack quite a punch when it comes to nutrients. So top baked sweet potatoes with brown sugar, butter and cinnamon or toss a refreshing kale salad for the perfect delicious and nutritious side dishes on your winter menu!
