How to Eat More Vegetables Without Even Trying

Let’s face it, not all of us like vegetables. In fact, some folks find eating vegetables downright challenging. Here’s the problem. It’s a proven fact that eating vegetables can improve your health. So, how can we incorporate more veggies into our diet without the scrunched up faces and nose holding?

Breakfast is an excellent way to start. For example, instead of plain scrambled eggs, add some vegetables into your scramble. Spinach, mushrooms, peppers, onions and tomatoes all work well, and some of your favorite variety of melted cheese will make it even better!

Also try introducing more vegetables into your diet by testing one new vegetable recipe per week. Cheesy cauliflower, bowtie pasta with baby peas, lettuce wraps and spaghetti squash are all great options, and any vegetable roasted or grilled will taste better than if it is simply boiled, steamed or microwaved.

For a snack, raw vegetables, such as cucumber slices, cherry or grape tomatoes (although tomatoes are technically a fruit…shhh), celery or broccoli, are delicious with dip – from all sorts of hummus, to fried pickle dip, ranch, guacamole (which will give you even more veggies in a fun, Cinco de Mayo sort of way) and – wait for it…veggie dip!

Bake with veggies, add them to soup or disguise them in a smoothie or blended into sauces. You can even add vegetables to your chili. Just dice them into very small pieces and they will cook down so that you don’t even notice.
