Fresh Herbs: How to Store Them & Make Them Last

  • Post published:

It’s a wonderful thing when your herb garden is thriving, but what do you do when your harvest is so big that you wish you could save some for later? Do exactly that!

Storing herbs in the refrigerator

If you simply need to keep your herbs fresh and flavorful for a few weeks more, you can store them in the fridge. First, trim off the very base of the stems and any wilted or discolored leaves. Then treat them as you might a bunch of fresh flowers…either placing a bouquet in a vase or a jar with a few inches of water or by wrapping the stems in a damp paper towel.

Herbs of a more delicate variety, with softer stems and leaves, should last up to two weeks if stored this way; and those of a studier variety may even last a week longer.

Long-term herb storage

Drying

You can dry your herbs to keep them for longer periods. Drying methods range from handing them upside down in a dry, temperate place; using a dehydrator; or you can even spread your herbs evenly on a baking sheet and heat them at 150 degrees until they dry.

Freezing

Another fantastic long-term herb storage method is to make herb “ice” cubes. For this, evenly distribute chopped herbs with extra virgin olive oil into ice cube trays and freeze. Then, simply pop them out as you need them for sauteing or in sauces and soups. Not only is this a convenient long-term herb storage method, it can extend the life of your herbs for months!

Additional herb storing tips

  • A brief ice-water bath will restore color before use and
  • Do not store your herbs near any fruits that emit gases which will cause them to deteriorate quicker.
