Seems like we’re all in a rush these days. Some nights dinner can be nothing less than a magic trick, but what if you could toss together something quick AND nutritious? If you stop at any convenient Perrine’s Produce location, you can!
Innovative pasta options include a quick and yummy Mediterranean twist on pasta primavera…all tied up with neat little bows! Just top your bow tie pasta with a fresh spinach, kalamata olives, halved cherry tomatoes and basil sauté. Or sauté shrimp and broccoli florets in a little white wine, olive oil, butter, garlic and toss over angel hair. Spice things up with crushed red pepper flakes and roasted cauliflower florets over linguini. If you’re a gnocchi lover, try them with chopped fresh asparagus, baby sweet peas and diced shallots. You’ll love it this way too!
How about going straight-up veggie with a vegetable trio that is hard to beat? Sauté fresh green beans and garlic; add a tomato, basil and fresh corn salad; and place some roasted Brussel sprouts on the side. I know what you are thinking, but roast at 400 until they are sweet and caramelized and even Brussel sprout haters will love your Brussels. You can also garnish them with freshly grated parmesan cheese if you like.
Spinach salad with kalamata olives, grape tomatoes, crumbled feta and a sweet balsamic dressing is a fast food fix that’s full of iron. Or go for a loaded baked potato topped with broccoli and melted cheddar or spinach and mushrooms…or both. We did say loaded!
